Kovakkai / Dondakai Fry Version -1

Even though the names says fry it consumes very little oil.It is good for diabetic patients.


Ingredients

  • Kovakkai / Dondakai - 1/2 kg
  • Sambar Powder - 2 teaspoons
  • Red Chilly Powder - 1/2 teaspoon
  • Salt - 1 1/2 teaspoons
  • Besan Flour - 1 teaspoon (optional)

Seasoning:

  • Onion - 1
  • Turmeric - 1/4 teaspoon
  • Hing - a pinch
  • Mustard Seeds - 1 teaspoon
  • Urad Dhall - 1/2 teaspoon
  • Oil - 2 tablespoons

Method
  • Wash and cut kovakkai length wise. Add sambar powder and chilly powder to it and mix well by hand.Cover and leave it aside for 15-20 minutes

  • Pressure cook the veggie for 1 whistle.Sprinkle water while doing so
  • Chop onion lengthwise.In a pan heat oil and season with mustard seeds and urad dhall.Add hing and turmeric.Saute the onions till translucent
  • Add the pressure cooked kovakkai and mix well
  • Now add salt mixed with water and leave it for 3 minutes
  • Finally mix besan flour with water (around 1/4 cup) without any lumps and add it to the veggie.Switch off the stove after 2 mintutes
  • Kovakkai / Dondakai fry is ready.Serve it as a side dish with any Sounth Indian Thali.It ca be mixed with hot plain rice also "Kovakkai sadham"
Variations

1. You can also cook directly (without pressure cooking) but it consumes more oil
2. Can also add potato slices along with this veggie
