Kovakkai / Dondakai Fry Version - 2

I have already posted another version of Kovakai fry but here there is slight deviation no onions involved


Ingredients
  • Kovakkai / Dondakai - 1/2 kg
  • Red Chilly Powder - 2 teaspoons
  • Salt - 1 1/2 teaspoons
  • Besan Flour - 1 teaspoon (optional)
Tadka
  • Oil - 2 tablespoons
  • Mustard Seeds - 1 teaspoon
  • Hing - a pinch
  • Channa dhal - 1/2 teaspoon
  • Curry leaves - few
Method
  • Wash the vegetables and chop them into round slices.Put chiily powder and salt.Mix well with your hand and leave it for 5 minutes
  • Meanwhile heat oil in a kadai.Splutter mustard seeds.Put hing and roast channa dhal.Saute curry leaves for few seconds
  • Add the marinated kovakkai and mix well
  • Close it with a lid and cook for 15  - 20 minutes in a medium flame

  •  Take out the lid now and then and swirl the veggies
  • After 20 minutes open the lid and sprinkle besan flour and mix well.Leave it for 5 minutes.No need to put the lid
  • Kovakkai fry is ready
It can be served as a side dish for Sambar Rice, Rasam rice and goes very with Curd Rice
It can be simply mixed with hot plain rice Kovakkai Sadham
