Vegetable Jeera Pulav

Again another recipe from a TV show and of course modified it here and there.It is not at all spicy so very much "Kid's Friendly" too

Ingredients
  • Basmathi Rice - 2 cups
  • Water - 3 cups
Vegetables
  • Carrot and Beans - 1/2 cup
  • Potato - 1 (optional)
  • Fresh or Frozen Peas - 1/4 cup
Tadka and Saute
  • Oil and Ghee - 1 tablespoon
  • Bay Leaf - 1
  • Elachi - 2 nos
  • Cinnamon Stick - 1 small piece
  • Cloves - 3
  • Jeera /Cumin Seeds - 1 teaspoon
  • Onion - 1 finely chopped
  • Capsicum - 1 small no: finely chopped (optional)
Masala Powders
  • Chilly Powder - 1 teaspoon
  • Coriander Powder - 1/2 teaspoon
  • Salt - 2 teaspoons
Method
Step 1 - Getting Basmathi rice ready
  • Wash rice and soak for 1/2 hour
  • Drain water completely
  • Now pour the mentioned quantity of water and cook in an electrical cooker or pressure cook for 1 whistle

Step 2 - Half cooked vegetables
  • Cut carrot and beans into thin slices.Dice Potatoes into small cubes
  • Take them together and fill it up with water till it get immersed
  • Take peas in another vessel and again fill it up water as above
  • Pressure cook them for 1 whistle
Step 3 - Masala Preparation
  • Heat oil and ghee together
  • Add the mentioned spices one by one.Once the cumin seeds splutters put onions and fry till it turns golden brown
  • Add chopped capsicum and saute well.It should be soft
  • Now add peas and other half cooked veggies
  • Add masala powders and salt.Mix well and make sure the veggies are well cooked at this stage.It will hardly take few minutes

Step 4 - Pulav Mixing
  • In a broad basin put 1 layer of cooked rice and top it with a layer of masala
  • Do it alternatively till the rice and masala gets exhausted
  • Mix well with a fork.Make sure you do not mash it

Pulav is ready.Serve it with any spicy gravy

Variation from the original version
  • The original version does not use potatoes and capsicum
  • No bay leaf also
  • And it involves very less quantity of vegetables
