Vegetable Dum Biriyani Version 2

This is another version of Dum Biriyani involving less ingredients and freshly ground paste is marinated in  curd to enhance the aroma

Ingredients and Preparation

Part - 1 - Soaking Basmathi Rice
  • Basmati Rice - 3 cups
Wash the rice and soak it in water for 20 minutes.Drain it under a colander before use


Part 2 - Green paste and marination
  • Mint leaves - 1 cup
  • Coriander leaves - 1/2 cup
  • Small onions - 15 nos
  • Cashews - 10 nos
  • Ginger garlic paste - 1 1/2 teaspoons
  • Curd - 1 ladle

Preparation
Grind the above items (expect curd) without water


Add curd to the above paste and mix well.Leave it for 30 minutes.This step is called marination


Part 3 - Tadka and Saute
  • Refined oil / Butter / Ghee - 3 tablespoons
  • Bayleaf - 1
  • Cinnamon stick - small piece
  • Cardamom/elachi - 2 nos (slit opened)
  • Cloves - 3 nos
  • Onions - 2 
  • Tomato -2 
  • Green Chilly - 6 nos (only source for spiciness)
  • Turmeric - little
Part 4 - Vegetables
  • Carrot - 2 (medium sized)
  • Beans - 7
  • Potato - 1or 2 (depending upon the size)
  • Peas- - 1/4 cup
Cut the vegetables lengthwise

Part 5- Others
  • Salt - 1 1/2 - 2 teaspoons
  • Water - 4 1/2 cups
  • Lemon - 1 (optional)
Note : Garam masala, chilly and coriander powders are not added in this version

Method
  • Heat oil or melt butter / ghee in a vessel.Saute bayleaf, cinnamon stick, cardamom and cloves in a simmer flame
  • Add thinly sliced onions and fry till it becomes golden brown in a medium flame.Put a pinch of salt while doing this
  • Throw in chopped tomatoes and saute well with a pinch of salt 
  • Fry slit green chillies and add turmeric powder
  • Pour in the marinted paste and mix well.Cook till the raw smell escapes
  • Add the cut vegetables and saute for a minute
  • Add the soaked and drained rice.Put salt and swirl it once in simmer flame
  • Pour water and mix well
  • Now dum it as follows: Heat a tawa and place the biriyani pot / vessel over it (this will prevent from charring / burning).Close the vessel with a lid and put a weight on top of the lid.See the pic below for better understanding
  • Cook for 15 minutes in a medium flame.Switch off the stove and leave it for 5 minutes
  • Open the lid and squeeze lemon if desired.Mix thoroughly

Dum Biriyani is ready.Serve it with Onion Raithaand Brinjal Gravy
