Simple Mixed Vegetable Curry

This particular curry involves combo cooking ie in microwave and in stove top.Alternatively it can be done in stove top alone
Ingredients
Part - 1 - Microwave cooking
  • Potato - 2 nos (medium sized)
  • Carrot - 1 no: (big sized)
  • Peas - 1/2 cup
Part 2 - Seasoning
  • Oil - 1 tablespoon
  • Mustard seeds - 1 teaspoon
  • Channa dhal - 1/2 teaspoon
  • Green chillies - 2 or 3 (slit it)
Part 3 - Saute
  • Onion - 1 (big sized)
  • Capsicum - 1
  • Salt - as needed
Method
  • Peel off potato skin and dice into small cubes
  • Chop carrot into small cubes
  • Take Part 1 items in "microwave safe bowl" and sprinkle little water
  • Microwave for 4 minutes at high power or till it is cooked soft
  • Meanwhile heat oil in a kadai.Season mustard seeds, channa dhal and green chillies 
  • Add chopped onions with a pinch of salt.Saute it till golden brown
  • Add chopped capsicum and saute till it is soft
  • Now add the microwaved vegetables and swirl it once
  • Garnish with kasuri methi or coriander leaves if needed
Simple Mixed Vegetable Curry is ready.Serve along with Mint Garlic Rasam
