Mango Pickle

My first attempt in making a pickle and it turned out well.Now summer has started and its the right season for mangoes.Here is the recipe for tangy and spicy mango pickle which is a good accompaniment for Parathas, Curd Rice and it can be mixed with Plain Rice also

Ingredients
  • Raw Mango - 2 nos 
  • Salt - 3 teaspoons
  • Pickle Powder - 3 tablespoons or more (either home made or store bought)
  • Gingelly oil - 1/4 cup or more
  • Mustard seeds - 2 teaspoons
Method
Step 1 - Soaking
  • Cut mango into small pieces
  • In a mixing bowl add 1 ladle of chopped mangoes and put 1/2 teaspoon of salt.Mix well
  • Again add another layer of chopped mangoes and 1/2 teaspoon of salt
  • Repeat till the cut mangoes gets exhausted.Mix it well using a sterile spoon
  • Leave it for 2-3 hours
Step 2 - Mixing
  • Add pickle powder little by little and mix it well with a sterile ladle / spoon.Alternatively you can close the mixing bowl with a tight lid and shake it well
Step 3 - Seasoning
  • Heat half quantity of gingelly oil.Splutter mustard seeds and allow it to cool
  • Pour this seasoning over the pickle
  • Again mix it well
  • Slightly heat the remaining oil.Cool and pour it over the pickle

  • Hot and Spicy Mango Pickle is ready to be served
  • Can be stored till 2 weeks under refrigeration
