சாமை தயிர் சாதம் / Little Millet Curd Bhath / Sama Perugu Annam

Samai / Little Millet unlike white rice are loaded with minerals, fiber and easy to digest.It also lowers the risk of diabetes
I got this recipe from a TV Show but then modified it using some more ingredients
Use "full cream curd and milk" while preparing for "children".In contrast use "skimmed curd and milk" for "weight watchers"

Ingredients
Part 1 - Pressure Cooker
  • Samai / Little Millet - 1 cup
  • Full Cream / Skimmed Milk - 2 cups
  • Water - 1 cup
  • Salt - 1 teaspoon
  • Hing - 1/4 teaspoon
Part 2 - Seasoning 
  • Oil - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Channa dhal and Urad dhall - 1/2 teaspoon each
  • Green chillies - 2 (finely chopped)
  • Curry leaves - little
Part 3 - Saute and Mixing
  • Onion - 1 medium sized (finely chopped) - optonal
  • Capsicum - 1 small sized (finely chopped)
  • Carrot - 1 medium sized (grated)
  • Curd - as required
  • Coriander leaves - little

Method
Step - 1 Pressure Cooking
  • Pressure cook samai with water, milk, salt and hing for 3 whistles
  • Cool it
Step 2 - Seasoning
  • In a separate kadai heat oil splutter mustard seeds, fry channa and urad dhals till golden brown
  • Add curry leaves, green chillies and saute for a minute
Step 3 - Saute
  • Now add onions and saute it with a pinch of salt
  • Now slightly saute capsicum.Make sure it remains crunchy
  • Add carrot and just swirl it once.Cool it

Step 4 - Samai Curd Bhath
  • Once cooled add it over the cooked samai rice (step 1) and mix well using a ladle
  • Now pour curd and blend it well.Garnish with chopped coriander leaves and curry leaves
