Capsicum Raitha

This is a simple raitha which goes well with Biriyani and Parathas.I got this recipe from a Magazine long ago
But the original recipe does not contain onions in it

Ingredients
Part 1 - Grinding
  • Grated coconut - 1/2 cup
  • Green chillies - 2 or 3
  • Ginger - 1 small piece
Part 2 - Seasoning and Saute
  • Oil - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - little
  • Hing - little
  • Onion - 1 ( finely chopped)
  • Capsicum - 2 medium sized (diced into cubes)
  • Salt - 3/4 teaspoon
Part 3 - Others
  • Whipped curd (skimmed or full cream) - 1 cup
  • Coriander leaves - garnish
Method
Step 1 - Grinding and Mixing
  • Take the items mentioned under "Part 1" in a mixer jar.Grind it into fine paste by sprinkling little water 
  • Now mix this with the whipped curd.blend it well

Step 2 - Seasoning and Saute
  • Heat oil and splutter mustard seeds.Sprinkle hing and saute curry leaves
  • Add onions and saute it with a pinch of salt.
  • Now add capsicum cubes and saute it for few minutes.Add salt for raitha here.Make sure it remains crunchy
  • Allow this to cool
Step 3 - Capsicum Raitha
  • Once cooled add it to the curd mixture (prepared in step 1)
  • Mix well and garnish with coriander leaves

Capsicum Raitha is ready.Serve with any Pulav,Parathas
